Academia Barilla was founded to defend and promote the Italian Food Culture and Gastronomy around the world.  Part of its mission is to educate whoever wants to understand in depth Italian food and its regional contents (as you know Italy has strong regional traditions which change radically from part to part).

There are full immersion courses for professional chefs of the duration of two weeks. The program consists in an overall history class of half a day to teach the background of Italy’s culture and why the cuisines are so different from, for example, the north and the south, but even from east to west of Italy; how recipes change from towns just a few miles apart.

Students would then follow a few half day classes on specific milestone products such as the Extra Virgin Olive Oil, Italian Cheeses, the Traditional Balsamic Vinegar and  Wine with professional and world renowned experts (they would then experience a full day in production plants of some of these products to understand better the process of making). The rest of the time would be spent in a state of the art kitchens with hands-on cooking experiences with Academia Barilla’s professional Chefs. Each student at the end of the course would receive a Diploma in Fundamentals of Italian Gastronomy and could then eventually participate in  Advanced courses in whatever specific field of  immense food culture they desire (pasta, sauces, meat, fish, pastries, bread, pizza, etc.).
